Pasta alle Vongole - Pasta with Clams

Pasta alle Vongole is a recipe which is often requested and it is a dish that I love to make. It is deceptively simple which can make it daunting but if you follow the simple steps you will be able to make perfect Pasta alle Vongole every time!

We will first look at how to choose the clams, how to keep them in perfect shape before cooking and then how to open them in the best possible way. Then we will look at how to finish the pasta in order to make it lovely and creamy using just the clam water and olive oil.

To make pasta alle vongole you will ideally need to get fresh clams, all the other ingredients should be easy to find. The equipment you will need are all things that you would find in a normal kitchen (ie. a knife, bowls, a colander, pots and pans etc). You will get a complete ingredient and equipment list after booking.

After you book a lesson you will receive a complete ingredient and equipment list so that you can be well prepared to cook along.

Lessons will take place using Zoom, so you will need a Zoom account which you can get HERE (it’s free). We recommend testing out Zoom with friends before the lesson if you haven’t used it before. 

You will receive the zoom meeting invitation and sign in details several hours before the lesson begins. It’s a good idea to sign in about 10 minutes before the lesson starts and make sure all your equipment is working.

Make sure your computer / tablet is well charged or plugged in, make sure your speaker and microphone is working. If you prefer not to be seen or heard you can turn your camera and microphone off and just watch along.
