THE Sicilian cake. From the Arabs to the Nuns, the Cassata has remained the Queen of Sicilian desserts. The delicious mix of sponge cake, sweet ricotta and marzipan, decorated with beautiful candied fruits make it an eye catching centre piece for the Sicilian easter feast.
In this interactive cooking class we will look at how to make an authentic Sicilian Cassata, including how to make our own homemade marzipan which you can use to make other classic Sicilian easter treats such as Agnello di Pasqua (marzipan lambs) or La Frutta Martorana (marzipan fruit). We will also see how to convert the recipe in order to make small individual Cassata, or Cassatine.
To make Cassata you will ideally need to get some nice fresh ricotta, if you can’t get good fresh ricotta, get in touch and I can suggest some solutions. You will also need some candied fruits and a pie tin with angled sides suitable for constructing the Cassata. The other ingredients should be easy to find and all other equipment required are things you would find in a normal kitchen, such as a knife, bowls, pots and pans.

After you book a lesson you will receive a complete ingredient and equipment list so that you can be well prepared to cook along.
Lessons will take place using Zoom, so you will need a Zoom account which you can get HERE (it’s free). We recommend testing out Zoom with friends before the lesson if you haven’t used it before.
You will receive the zoom meeting invitation and sign in details several hours before the lesson begins. It’s a good idea to sign in about 10 minutes before the lesson starts and make sure all your equipment is working.
Make sure your computer / tablet is well charged or plugged in, make sure your speaker and microphone is working. If you prefer not to be seen or heard you can turn your camera and microphone off and just watch along.
