The best thing to do when you have lots of lemons is to make Limoncello and Granita! In this interactive cooking class, you will learn how to make delicious Limoncello and one of the most ancient frozen desserts, Lemon Granita.

In Italy, ordering a Limoncello is a hit or miss affair, sometimes it’s an incredible taste sensation, and other times it seems like a sticky sugar syrup with lemon flavoring. To make delicious Limoncello you need time and patience, so in this class, we will look in detail at all the steps necessary to make your own Limoncello. We will also discuss how to adjust and adapt Limoncello recipes to suit your own tastes.

Granita is one of the oldest frozen recipes that we know of: the Greeks were making it using ice from Mount Etna in Sicily over 2000 years ago! In this class, we will use one of the oldest (and fastest) methods to make this refreshing frozen dessert, it just requires a little science and a little elbow grease. We will also discuss other tried-and-tested methods for making granita that require more time (but less of a work-out!)

La Cassata, THE Sicilian cake. From the Arabs to the Nuns, the Cassata has remained the Queen of Sicilian desserts. The delicious mix of sponge cake, sweet ricotta and marzipan, decorated with beautiful candied fruits make it an eye catching centre piece for the Sicilian easter feast.

In this interactive cooking class we will look at how to make an authentic Sicilian Cassata, including how to make our own homemade marzipan which you can use to make other classic Sicilian easter treats such as Agnello di Pasqua (marzipan lambs) or La Frutta Martorana (marzipan fruit). We will also see how to convert the recipe in order to make small individual Cassata, or Cassatine.

In this class you are going to see everything you need to know to recreate this dish perfectly, including how to make your own delicious tomato sauce from scratch and the perfect way to cook pasta.

Pasta alla Norma is naturally vegan (if you leave off the optional grating of cheese), and it is very satisfying.
